Carrot Casserole

Do you have children who don't like to eat veggies?  How about any fussy eaters in your family??

Spring time and Easter always make me think of carrots.  And for years we have enjoyed a carrot casserole that everyone seems to like.  Simple ingredients and a great enticement if you like cheese.

Carrot Casserole



Cast of characters -

 2 lbs California Carrots (sliced)
8 oz Velveeta Cheese
1 stick Butter
Corn Flakes

Cook carrots until tender.  Drain

 Melt butter

Add Velveeta and melt with butter


Fold in  carrots

and mix with cheese/butter mixture

Pour into 9 x 13" pan and top with crushed corn flakes.

Bake at 350 degrees for 30 minutes.

Very very yummy!

My youngest is a picky eater, so this will be the perfect way to make sure that he eats his carrots. It looks great!
